Easter Bunny-Bum Cookies

I don't usually post on a Saturday, but as it is Easter weekend I thought I would have a go at making my own mini treats to celebrate. These didn't quite work out the way I had first imagined as the icing I used on the paws was a bit too thin, but I'm still really pleased with them as I haven't baked in absolutely ages!

Personally, I think these turned out more like shortbread biscuits rather than cookies. However, they obviously tasted good enough as my dad has currently put in an order for 20 un-iced cookies to take to work next week. This is just a simple vanilla cookie recipe that can be adapted to suit any need or occasion!

  • 225g soft butter, lightly salted.
  • 140g white caster sugar.
  • 280g plain white flour.
  • 1 egg yolk.
  • 1 pinch of salt.
  • 1 teaspoon of vanilla extract.
  1. Cream the butter and caster sugar together, either by hand or in an electric mixer, until it looks fluffy and light.
  2. Add the egg yolk and mix further before adding in the flour, salt and vanilla extract. Make sure to sieve the flour before adding it to the mixture, there's nothing worse the little lumps of flour in an otherwise gorgeous biscuit! When I made these, I had to add more flour than the recipe said as the cookie dough was faaaaaaar too soft to attempt to roll out, I would have ended up with buttery smears all over the kitchen counter and 'aint nobody got time for that'!
  3. When the dough seems to be a thicker texture you can either add your extra ingredients (choc chips etc.) or leave it as it is and roll it into a sausage shape before putting into the freezer for 30 minutes. I left mine plain vanilla as I was doing a fair amount of decoration, but it's completely up to you!
  4. Preheat the oven to 180° whilst the dough is in the freezer.
  5. Cut out the shape and size you want for the cookies before popping them on a tray with greaseproof paper and putting into the oven for either 15 minutes or until golden.
  6. Decorate as you please!!
